Recipe: Pumpkin - Potato Soup with Sunflower Lecithin

What does lecithin do with the soup?

- binds all the ingredients together better due to the emulsifying function

Ingredients for 5 servings
2 tomatoes
1 clove of garlic
10g olive oil
250 grams of potatoes
250gr Kürbis
1 Forest head Apple
800ml hot water
3 heaped teaspoons of vegetable broth
100g fresh cream

1 heaped teaspoon of curry

5gr sunflower lecithin
juice 1/2 lemon

Remove the stalks of the tomatoes and then cut them into small pieces. Peel the garlic, also chop or press and add to the tomatoes in the saucepan, stew with the olive oil for about 3 minutes. Cut the potatoes, pumpkin and apple into small cubes and add to the saucepan. Dissolve the vegetable stock in the hot water and stir well, then pour into the saucepan. The soup is now cooked for about 25 minutes. TheCrème fraîche, Add the lecithin and curry and puree the soup. Finally, season with salt/pepper and serve hot.
