homemade garlic herb butter with sunflower lecithin

 

What does lecithin do with the herb butter?
Due to the emulsifier function, the lecithin binds all the ingredients better together and thus ensures optimal fat distribution.

Ingredients for 30 pieces herb butter:
6 sprigs of parsley, chopped
4 sprigs of dill, picked
20 stalks of chives, cut into pieces
2 Show rosemary, picked off
1 red onion
1 yellow onion
2 cloves garlic
2 tsp salt
1 TL Pfeffer
750gr butter, softened in pieces
30gr sunflower lecithin

Preparation:
Take the butter out of the fridge, cut into pieces and leave uncovered at room temperature. The herbs are then washed and chopped into small pieces along with the onions and garlic. Now all the ingredients are mixed in a food processor or a stand mixer, so that a nice even mass results. The finished herb butter can be consumed directly. The herb butter is also perfect for freezing.
