Wok pan with rapeseed lecithin

What is the function of lecithin in the wok pan?

Ingredients for 5 people:
3 onions
1 clove of garlic
10g olive oil
250gr Zuckerschoten
250gr Champignons
2 rote Paprika
1 yellow zucchine
1 rote Zucchini
250gr Scampi
300 grams of salmon
200ml coconut milk
5TL Rapslecithin


Cut the vegetables into small pieces, mix with the salmon, the scampi, the rapeseed lecithin and the coconut milk in a cast-iron wok and cook for 25 minutes at 200 g.
